DIRECTIONS:

  • 1 bag LIGHT DELIGHT CARROT CAKE MIX
  • 3/4 cup coconut oil (or your preferred oil)
  • 3 eggs (or an egg replacer of your choice)
  • 4 cups (1 lb) finely grated carrots
  1. Using an electric mixer, combine all ingredients and mix until smooth.
  2. Pour the batter into a greased cake pan or cupcake wrappers.
  3. Preheat the oven to 350ยฐF.
  4. Bake for 45-55 minutes for a cake or 20-25 minutes for cupcakes, until a toothpick inserted into the center comes out clean.
  5. Let cool completely before frosting.
