DIRECTIONS:
- 1 bag LIGHT DELIGHT CARROT CAKE MIX
- 3/4 cup coconut oil (or your preferred oil)
- 3 eggs (or an egg replacer of your choice)
- 4 cups (1 lb) finely grated carrots
- Using an electric mixer, combine all ingredients and mix until smooth.
- Pour the batter into a greased cake pan or cupcake wrappers.
- Preheat the oven to 350ยฐF.
- Bake for 45-55 minutes for a cake or 20-25 minutes for cupcakes, until a toothpick inserted into the center comes out clean.
- Let cool completely before frosting.
