DIRECTIONS:
- 1 bag LIGHT DELIGHT CINNAMON ROLL MIX (Yeast packet included)
- 1 1/3 cups cold milk (or dairy-free alternative)
- 6 tbsp butter (or dairy-free alternative), melted
- 2 tsp pure vanilla extract
- 2 eggs (or egg replacer)
Allergen Options:
For egg allergies, use an equivalent prepared egg replacer and reduce water by 1/4 cup. The batter should be thick.
INSTRUCTIONS:
- Using an electric mixer, combine the milk, melted butter, and vanilla extract.
- Add the yeast packet to the milk mixture and stir to combine.
- Add the eggs (or egg replacer) and dry mix. Blend on low until smooth and thickened.
- Cover and chill the dough for about one hour.
- Place the dough between two greased sheets of plastic wrap. Roll the dough into a rectangle, about 1/2 inch thick.
- Remove the top sheet of plastic wrap and spread the desired filling evenly over the dough, leaving a 1-inch border of exposed dough at the top and bottom.
- Starting from the edge farthest from you, gently roll the dough onto itself.
- Use the plastic wrap to help guide the dough as you roll.
- With a lightly floured knife, gently slice the roll into 12 even pieces.
- Place the rolls on a greased baking sheet, leaving 2-3 inches of space between each roll. Allow the rolls to rise in a warm area until they double in size.
- Preheat the oven to 350ยฐF. Bake for 25-30 minutes until lightly browned.
- Let the rolls cool for 10 minutes before frosting.
Ingredients:

- Non-GMO Cornstarch
- Tapioca Starch
- Millet Flour
- Cane Sugar
- Active Dry Yeast
- Psyllium Husk Powder
- Xanthan Gum
- Salt
CINNAMON ROLL FILLING:
- 4 tbsp butter (or dairy-free alternative), melted
- 3/4 cup packed brown sugar
- 1 tbsp cinnamon
Combine the brown sugar and cinnamon. Spread the melted butter on the rolled-out dough. Sprinkle the cinnamon-sugar mixture evenly over the butter, then finish as directed above.
